Ingredients

  • Brown rice penne pasta - 150 grams
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Zucchini - 1 medium, diced
  • Red bell pepper - 1 medium, diced
  • Spinach - 100 grams, fresh
  • Cherry tomatoes - 150 grams, halved
  • Italian seasoning - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Parmesan cheese - 30 grams, grated (optional)

Steps

  1. Bring a large pot of salted water to a boil. Add the brown rice penne pasta and cook according to package instructions until al dente, usually about 10-12 minutes.
  2. While the pasta is cooking, heat olive oil in a large skillet over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
  3. Add diced zucchini and red bell pepper to the skillet. Cook for 5-7 minutes, stirring occasionally, until the vegetables are soft.
  4. Stir in the fresh spinach and halved cherry tomatoes. Cook for an additional 2-3 minutes until the spinach wilts and the tomatoes begin to soften.
  5. Once the pasta is cooked, drain it and add it to the skillet with the vegetables. Mix in Italian seasoning, and season with salt and black pepper to taste.
  6. Toss everything together until well combined and heated through. Serve hot, topped with grated Parmesan cheese if desired.
