- Brisket - 500 grams
- Yellow onions - 2 medium (about 300 grams)
- Garlic - 3 cloves, minced
- Beef broth - 240 ml
- Olive oil - 2 tablespoons
- Brown sugar - 1 tablespoon
- Salt - 1 teaspoon
- Black pepper - 1 teaspoon
- Dried thyme - 1 teaspoon
- Bay leaf - 1
- Carrots - 1 medium, chopped
- Parsley - for garnish
Steps
- Preheat your oven to 150°C (300°F).
- Heat olive oil in a large oven-safe pot over medium heat. Add sliced onions and cook until they are soft and caramelized, about 15 minutes.
- Stir in minced garlic, brown sugar, salt, black pepper, and dried thyme. Cook for another 2 minutes until fragrant.
- Push the onion mixture to the sides of the pot and add the brisket in the center. Sear the brisket on both sides for about 5 minutes each until browned.
- Add the chopped carrots and pour in the beef broth. Place the bay leaf on top.
- Cover the pot with a lid and transfer it to the preheated oven. Cook for 2 to 2.5 hours, or until the brisket is fork-tender.
- Remove the pot from the oven, discard the bay leaf, and let the brisket rest for 10 minutes before slicing.
- Serve the brisket slices topped with the caramelized onion mixture and garnish with fresh parsley.
