  • Brisket - 500 grams
  • Yellow onions - 2 medium (about 300 grams)
  • Garlic - 3 cloves, minced
  • Beef broth - 240 ml
  • Olive oil - 2 tablespoons
  • Brown sugar - 1 tablespoon
  • Salt - 1 teaspoon
  • Black pepper - 1 teaspoon
  • Dried thyme - 1 teaspoon
  • Bay leaf - 1
  • Carrots - 1 medium, chopped
  • Parsley - for garnish

Steps

  1. Preheat your oven to 150°C (300°F).
  2. Heat olive oil in a large oven-safe pot over medium heat. Add sliced onions and cook until they are soft and caramelized, about 15 minutes.
  3. Stir in minced garlic, brown sugar, salt, black pepper, and dried thyme. Cook for another 2 minutes until fragrant.
  4. Push the onion mixture to the sides of the pot and add the brisket in the center. Sear the brisket on both sides for about 5 minutes each until browned.
  5. Add the chopped carrots and pour in the beef broth. Place the bay leaf on top.
  6. Cover the pot with a lid and transfer it to the preheated oven. Cook for 2 to 2.5 hours, or until the brisket is fork-tender.
  7. Remove the pot from the oven, discard the bay leaf, and let the brisket rest for 10 minutes before slicing.
  8. Serve the brisket slices topped with the caramelized onion mixture and garnish with fresh parsley.
