Ingredients

  • Cooked brisket - 200 grams, diced
  • Potatoes - 2 medium (about 300 grams), peeled and diced
  • Onion - 1 small, finely chopped
  • Red bell pepper - 1, diced
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Eggs - 2
  • Water - 1/4 liter

Steps

  1. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced potatoes, season with salt and pepper, and cook for about 10-12 minutes until golden and fork-tender, stirring occasionally.
  2. Add the chopped onion, red bell pepper, and minced garlic to the skillet with the potatoes. Cook for another 5 minutes until the vegetables are softened.
  3. Stir in the diced brisket and paprika, mixing well. Cook for another 5 minutes, allowing the brisket to heat through and the flavors to meld.
  4. In a separate small frying pan, heat the remaining tablespoon of olive oil over medium heat. Crack the eggs into the pan and fry them to your desired doneness, about 3-4 minutes for sunny-side up.
  5. Divide the brisket hash onto two plates, top each with a fried egg, and sprinkle with fresh parsley before serving.
