Ingredients
- Cooked brisket - 200 grams, diced
- Potatoes - 2 medium (about 300 grams), peeled and diced
- Onion - 1 small, finely chopped
- Red bell pepper - 1, diced
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Eggs - 2
- Water - 1/4 liter
Steps
- In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced potatoes, season with salt and pepper, and cook for about 10-12 minutes until golden and fork-tender, stirring occasionally.
- Add the chopped onion, red bell pepper, and minced garlic to the skillet with the potatoes. Cook for another 5 minutes until the vegetables are softened.
- Stir in the diced brisket and paprika, mixing well. Cook for another 5 minutes, allowing the brisket to heat through and the flavors to meld.
- In a separate small frying pan, heat the remaining tablespoon of olive oil over medium heat. Crack the eggs into the pan and fry them to your desired doneness, about 3-4 minutes for sunny-side up.
- Divide the brisket hash onto two plates, top each with a fried egg, and sprinkle with fresh parsley before serving.
