Ingredients

  • Brisket - 300 grams
  • Onion - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Beef broth - 250 ml
  • Worcestershire sauce - 1 tablespoon
  • All-purpose flour - 2 tablespoons
  • Olive oil - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste
  • Fresh thyme - 1 teaspoon, chopped

Steps

  1. In a medium pot, heat the olive oil over medium heat. Add the diced onion, carrot, and celery, sautéing until softened, about 5 minutes.
  2. Add the minced garlic and cook for an additional 1 minute until fragrant.
  3. Sprinkle the flour over the vegetable mixture and stir well to combine, cooking for about 2 minutes to eliminate the raw flour taste.
  4. Gradually whisk in the beef broth, ensuring there are no lumps. Add the Worcestershire sauce, thyme, salt, and pepper.
  5. Add the cooked brisket (cut into small pieces) to the pot and bring the mixture to a simmer.
  6. Reduce the heat to low and let the gravy simmer for about 30 minutes, stirring occasionally until it thickens to your desired consistency.
  7. Taste and adjust seasoning if necessary, then serve warm over mashed potatoes or your favorite side.
