- Brown sugar - 2 tablespoons
- BBQ sauce (kosher) - 100 ml
- Honey - 1 tablespoon
- Apple cider vinegar - 1 tablespoon
Steps
- Preheat your smoker or oven to 110°C (225°F).
- In a small bowl, mix together the kosher salt, black pepper, garlic powder, onion powder, paprika, and brown sugar to create a dry rub.
- Rub the spice mixture all over the brisket, ensuring it is evenly coated. Let it rest at room temperature for 30 minutes.
- Place the brisket in the smoker or on a baking tray in the oven and cook for about 4 hours, or until the internal temperature reaches 90°C (195°F).
- Remove the brisket and let it rest for 30 minutes, then cut it into 2.5 cm cubes.
- In a bowl, mix the BBQ sauce, honey, and apple cider vinegar together.
- Toss the brisket cubes in the sauce mixture until well-coated.
- Return the coated brisket cubes to the smoker or oven and cook for an additional 1 hour at 120°C (250°F), allowing them to caramelize.
