  • Brown sugar - 2 tablespoons
  • BBQ sauce (kosher) - 100 ml
  • Honey - 1 tablespoon
  • Apple cider vinegar - 1 tablespoon

Steps

  1. Preheat your smoker or oven to 110°C (225°F).
  2. In a small bowl, mix together the kosher salt, black pepper, garlic powder, onion powder, paprika, and brown sugar to create a dry rub.
  3. Rub the spice mixture all over the brisket, ensuring it is evenly coated. Let it rest at room temperature for 30 minutes.
  4. Place the brisket in the smoker or on a baking tray in the oven and cook for about 4 hours, or until the internal temperature reaches 90°C (195°F).
  5. Remove the brisket and let it rest for 30 minutes, then cut it into 2.5 cm cubes.
  6. In a bowl, mix the BBQ sauce, honey, and apple cider vinegar together.
  7. Toss the brisket cubes in the sauce mixture until well-coated.
  8. Return the coated brisket cubes to the smoker or oven and cook for an additional 1 hour at 120°C (250°F), allowing them to caramelize.
