- Carrots - 100 grams, peeled and sliced
- Prunes - 50 grams, pitted and chopped
- Dried apricots - 50 grams, chopped
- Honey - 2 tablespoons
- Orange juice - 60 ml
- Cinnamon - 1/2 teaspoon
- Nutmeg - 1/4 teaspoon
- Salt - 1/4 teaspoon
- Olive oil - 1 tablespoon
Steps
- Preheat the oven to 190°C (375°F).
- In a mixing bowl, combine the diced sweet potatoes and sliced carrots.
- Add the chopped prunes and dried apricots to the bowl.
- In a separate small bowl, mix together the honey, orange juice, cinnamon, nutmeg, and salt.
- Pour the honey mixture over the sweet potato and carrot mixture, and toss to coat evenly.
