Ingredients

  • Sweet potatoes - 200 grams, peeled and diced
  • Carrots - 100 grams, peeled and sliced
  • Prunes - 50 grams, pitted and chopped
  • Dried apricots - 50 grams, chopped
  • Honey - 2 tablespoons
  • Orange juice - 60 ml
  • Cinnamon - 1/2 teaspoon
  • Nutmeg - 1/4 teaspoon
  • Salt - 1/4 teaspoon
  • Olive oil - 1 tablespoon

Steps

  1. Preheat the oven to 190°C (375°F).
  2. In a mixing bowl, combine the diced sweet potatoes and sliced carrots.
  3. Add the chopped prunes and dried apricots to the bowl.
  4. In a separate small bowl, mix together the honey, orange juice, cinnamon, nutmeg, and salt.
  5. Pour the honey mixture over the sweet potato and carrot mixture, and toss to coat evenly.
  6. Drizzle the olive oil over the mixture and toss again.
