Ingredients

  • Corn tortillas - 4
  • Eggs - 4 large
  • Olive oil - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Ground cumin - 1/2 teaspoon
  • Paprika - 1/4 teaspoon
  • Avocado - 1 medium, mashed
  • Lime juice - 1 tablespoon
  • Tomato - 1 medium, diced
  • Red onion - 1/4 small, finely chopped
  • Cilantro - 2 tablespoons, chopped
  • Feta cheese - 50 grams, crumbled (optional)
  • Hot sauce - to taste (optional)

Steps

  1. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the corn tortillas one at a time and cook until crispy and golden, about 2-3 minutes per side. Set aside on a paper towel to drain excess oil.
  2. In a bowl, whisk together the eggs, salt, black pepper, cumin, and paprika.
  3. In the same skillet, add the remaining tablespoon of olive oil and pour in the egg mixture. Cook while stirring gently until the eggs are scrambled and cooked through, about 3-5 minutes.
  4. In a small bowl, combine the mashed avocado with lime juice and a pinch of salt to make the avocado sauce.
  5. To assemble, place crispy tortillas on plates, top each with the scrambled eggs, diced tomatoes, red onion, and cilantro. Drizzle with the avocado sauce and sprinkle with feta cheese if using. Add hot sauce to taste.
