  • Black pepper - 1/4 teaspoon
  • Eggs - 4 large
  • Fresh parsley - 2 tablespoons, chopped
  • Feta cheese - 50 grams, crumbled
  • Avocado - 1, sliced (for serving)
  • Crusty bread - for serving

Steps

  1. In a large skillet, heat the olive oil over medium heat. Add the diced onion and red bell pepper, cooking until softened, about 5-7 minutes.
  2. Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.
  3. Add the canned diced tomatoes, tomato paste, ground cumin, paprika, salt, and black pepper. Stir well to combine and simmer for 10-15 minutes until the sauce thickens slightly.
  4. Create small wells in the sauce with a spoon and carefully crack an egg into each well. Cover the skillet and cook for 5-7 minutes, or until the egg whites are set but the yolks are still runny.
