- Onion - 1 medium, diced
- Red bell pepper - 1, diced
- Garlic - 3 cloves, minced
- Canned diced tomatoes - 400 grams
- Tomato paste - 2 tablespoons
- Ground cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Eggs - 4 large
- Fresh parsley - 2 tablespoons, chopped
- Feta cheese - 50 grams, crumbled
- Avocado - 1, sliced (for serving)
- Crusty bread - for serving
Steps
- In a large skillet, heat the olive oil over medium heat. Add the diced onion and red bell pepper, cooking until softened, about 5-7 minutes.
- Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.
- Add the canned diced tomatoes, tomato paste, ground cumin, paprika, salt, and black pepper. Stir well to combine and simmer for 10-15 minutes until the sauce thickens slightly.
- Create small wells in the sauce with a spoon and carefully crack an egg into each well. Cover the skillet and cook for 5-7 minutes, or until the egg whites are set but the yolks are still runny.
- Once the eggs are cooked to your liking, remove the skillet from heat and sprinkle with chopped parsley and crumbled feta cheese.
- Serve hot with slices of avocado and crusty bread for dipping.
