Ingredients

  • large eggs - 4
  • shredded low-fat cheddar cheese - 1 cup
  • cooked ground turkey - 150 grams
  • whole wheat tortillas - 2
  • bell pepper, diced - 1/2
  • red onion, diced - 1/4
  • spinach leaves - 1 cup
  • olive oil - 1 tablespoon
  • salt - 1/2 teaspoon
  • black pepper - 1/4 teaspoon

Steps

  1. In a medium bowl, whisk together the eggs, salt, and black pepper until well combined.
  2. Heat olive oil in a non-stick skillet over medium heat. Add the diced bell pepper and red onion and sauté for about 3-4 minutes until softened.
  3. Add the spinach leaves and cook for an additional 1-2 minutes until wilted.
  4. Pour the whisked eggs into the skillet, stirring gently until the eggs are fully cooked, about 3-4 minutes. Incorporate the cooked ground turkey and mix well.
  5. On a clean surface, lay one tortilla flat and spread half of the egg mixture over one half of the tortilla. Sprinkle half of the cheddar cheese on top.
  6. Fold the tortilla in half to form a quesadilla. Repeat with the second tortilla and remaining ingredients.
  7. Wipe the skillet clean and return it to medium heat. Place the quesadillas in the skillet and cook for about 3-4 minutes on each side until golden brown and the cheese is melted.
  8. Remove from the skillet, slice into wedges, and serve hot.
