- large eggs - 4
- shredded low-fat cheddar cheese - 1 cup
- cooked ground turkey - 150 grams
- whole wheat tortillas - 2
- bell pepper, diced - 1/2
- red onion, diced - 1/4
- spinach leaves - 1 cup
- olive oil - 1 tablespoon
- salt - 1/2 teaspoon
- black pepper - 1/4 teaspoon
Steps
- In a medium bowl, whisk together the eggs, salt, and black pepper until well combined.
- Heat olive oil in a non-stick skillet over medium heat. Add the diced bell pepper and red onion and sauté for about 3-4 minutes until softened.
- Add the spinach leaves and cook for an additional 1-2 minutes until wilted.
- Pour the whisked eggs into the skillet, stirring gently until the eggs are fully cooked, about 3-4 minutes. Incorporate the cooked ground turkey and mix well.
- On a clean surface, lay one tortilla flat and spread half of the egg mixture over one half of the tortilla. Sprinkle half of the cheddar cheese on top.
- Fold the tortilla in half to form a quesadilla. Repeat with the second tortilla and remaining ingredients.
- Wipe the skillet clean and return it to medium heat. Place the quesadillas in the skillet and cook for about 3-4 minutes on each side until golden brown and the cheese is melted.
- Remove from the skillet, slice into wedges, and serve hot.
