  • Corn tortilla chips - 150 grams
  • Eggs - 4 large
  • Black beans - 120 grams, canned and drained
  • Cherry tomatoes - 100 grams, halved
  • Avocado - 1 medium, diced
  • Shredded cheddar cheese - 100 grams
  • Green onions - 2, sliced
  • Fresh cilantro - 2 tablespoons, chopped
  • Olive oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Hot sauce - to taste (optional)

Steps

  1. Preheat your oven to 180°C (350°F).
  2. In a medium bowl, whisk the eggs with salt and black pepper until well combined.
  3. In a skillet, heat the olive oil over medium heat. Add the whisked eggs and scramble them until fully cooked, about 5 minutes. Remove from heat.
  4. On a baking sheet, spread out the corn tortilla chips evenly.
  5. Layer the scrambled eggs over the tortilla chips, followed by the black beans, cherry tomatoes, and shredded cheddar cheese.
  6. Place the baking sheet in the preheated oven and bake for 5-7 minutes, or until the cheese is melted and bubbly.
  7. Remove from the oven and top with diced avocado, sliced green onions, and chopped cilantro.
  8. Drizzle with hot sauce if desired, and serve immediately.
