Ingredients

  • Large Eggs - 4
  • Milk - 60 ml
  • Bell Pepper (diced) - 1/2 cup
  • Spinach (fresh) - 1 cup
  • Red Onion (diced) - 1/4 cup
  • Cherry Tomatoes (halved) - 1/2 cup
  • Feta Cheese (crumbled) - 50 g
  • Olive Oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black Pepper - 1/4 teaspoon
  • Fresh Basil (chopped) - 2 tablespoons

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a large bowl, whisk together the eggs, milk, salt, and black pepper until well combined.
  3. Heat the olive oil in a medium oven-safe skillet over medium heat.
  4. Add the diced red onion and bell pepper to the skillet, and sauté for 3-4 minutes until softened.
  5. Stir in the fresh spinach and cook until wilted, about 1-2 minutes.
  6. Pour the egg mixture into the skillet, then gently fold in the cherry tomatoes and crumbled feta cheese.
  7. Cook on the stovetop for 5 minutes without stirring until the edges begin to set.
  8. Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the frittata is set and lightly golden on top.
  9. Remove from the oven and let cool for a couple of minutes. Garnish with fresh basil before slicing and serving.
