- Large Eggs - 4
- Milk - 60 ml
- Bell Pepper (diced) - 1/2 cup
- Spinach (fresh) - 1 cup
- Red Onion (diced) - 1/4 cup
- Cherry Tomatoes (halved) - 1/2 cup
- Feta Cheese (crumbled) - 50 g
- Olive Oil - 1 tablespoon
- Salt - 1/2 teaspoon
- Black Pepper - 1/4 teaspoon
- Fresh Basil (chopped) - 2 tablespoons
Steps
- Preheat the oven to 180°C (350°F).
- In a large bowl, whisk together the eggs, milk, salt, and black pepper until well combined.
- Heat the olive oil in a medium oven-safe skillet over medium heat.
- Add the diced red onion and bell pepper to the skillet, and sauté for 3-4 minutes until softened.
- Stir in the fresh spinach and cook until wilted, about 1-2 minutes.
- Pour the egg mixture into the skillet, then gently fold in the cherry tomatoes and crumbled feta cheese.
- Cook on the stovetop for 5 minutes without stirring until the edges begin to set.
- Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the frittata is set and lightly golden on top.
- Remove from the oven and let cool for a couple of minutes. Garnish with fresh basil before slicing and serving.
