Ingredients

  • Cooked jasmine rice - 2 cups
  • Vegetable oil - 2 tablespoons
  • Green onions - 2, chopped
  • Red bell pepper - 1/2, diced
  • Carrot - 1 small, diced
  • Peas - 1/2 cup, frozen or fresh
  • Eggs - 2, lightly beaten
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Heat 1 tablespoon of vegetable oil in a non-stick skillet or wok over medium heat.
  2. Add the chopped green onions, diced red bell pepper, and diced carrot. Stir-fry for about 3-4 minutes until the vegetables are tender.
  3. Push the vegetables to one side of the skillet and add the remaining tablespoon of vegetable oil to the cleared space.
  4. Pour the beaten eggs into the skillet and scramble them until fully cooked, then mix with the vegetables.
  5. Add the cooked jasmine rice to the skillet and stir well to combine all ingredients.
  6. Add the frozen or fresh peas and continue to stir-fry for another 2-3 minutes until heated through.
  7. Pour the soy sauce and sesame oil over the rice, and season with salt and black pepper to taste. Stir well to combine all flavors.
  8. Remove from heat and serve hot, garnished with extra green onions if desired.
