Ingredients
- Cooked jasmine rice - 2 cups
- Vegetable oil - 2 tablespoons
- Green onions - 2, chopped
- Red bell pepper - 1/2, diced
- Carrot - 1 small, diced
- Peas - 1/2 cup, frozen or fresh
- Eggs - 2, lightly beaten
- Soy sauce - 2 tablespoons
- Sesame oil - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
Steps
- Heat 1 tablespoon of vegetable oil in a non-stick skillet or wok over medium heat.
- Add the chopped green onions, diced red bell pepper, and diced carrot. Stir-fry for about 3-4 minutes until the vegetables are tender.
- Push the vegetables to one side of the skillet and add the remaining tablespoon of vegetable oil to the cleared space.
- Pour the beaten eggs into the skillet and scramble them until fully cooked, then mix with the vegetables.
- Add the cooked jasmine rice to the skillet and stir well to combine all ingredients.
- Add the frozen or fresh peas and continue to stir-fry for another 2-3 minutes until heated through.
- Pour the soy sauce and sesame oil over the rice, and season with salt and black pepper to taste. Stir well to combine all flavors.
- Remove from heat and serve hot, garnished with extra green onions if desired.
