Ingredients

  • Eggs - 4 large
  • Heavy cream - 60 ml
  • Cooked bacon - 100 g, chopped
  • Bell pepper - 50 g, diced
  • Spinach - 30 g, chopped
  • Cheddar cheese - 60 g, shredded
  • Salt - 1/2 tsp
  • Black pepper - 1/4 tsp
  • Olive oil - 1 tsp

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a skillet, heat olive oil over medium heat and sauté the diced bell pepper until soft, about 3-4 minutes.
  3. Add the chopped spinach to the skillet and cook until wilted, about 2 minutes.
  4. In a large bowl, whisk together the eggs, heavy cream, salt, and black pepper.
  5. Stir in the sautéed vegetables and chopped bacon, mixing well.
  6. Pour the mixture into a greased small baking dish.
  7. Sprinkle the shredded cheddar cheese evenly on top.
  8. Bake in the preheated oven for 20-25 minutes or until the eggs are set and the cheese is bubbly.
  9. Remove from oven and let cool for a few minutes before slicing and serving.
