- Eggs - 4 large
- Bacon - 4 slices
- Spinach - 100 grams, fresh
- Cherry tomatoes - 100 grams, halved
- Avocado - 1 medium, diced
- Olive oil - 1 tablespoon
- Salt - to taste
- Pepper - to taste
- Cheddar cheese - 50 grams, shredded (optional)
Steps
- In a skillet over medium heat, cook the bacon until crispy, about 5-7 minutes. Remove and drain on paper towels.
- In the same skillet, using the bacon fat, add the spinach and cherry tomatoes. Sauté for 2-3 minutes until the spinach is wilted and the tomatoes are softened.
- While the vegetables are cooking, whisk the eggs in a bowl and season with salt and pepper.
- Push the vegetables to one side of the skillet and pour the eggs into the other side. Scramble the eggs until fully cooked, about 3-4 minutes.
- Divide the spinach, tomatoes, and scrambled eggs between two bowls. Top each bowl with diced avocado and crispy bacon.
