Ingredients

  • Eggs - 4 large
  • Bacon - 4 slices
  • Spinach - 100 grams, fresh
  • Cherry tomatoes - 100 grams, halved
  • Avocado - 1 medium, diced
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Pepper - to taste
  • Cheddar cheese - 50 grams, shredded (optional)

Steps

  1. In a skillet over medium heat, cook the bacon until crispy, about 5-7 minutes. Remove and drain on paper towels.
  2. In the same skillet, using the bacon fat, add the spinach and cherry tomatoes. Sauté for 2-3 minutes until the spinach is wilted and the tomatoes are softened.
  3. While the vegetables are cooking, whisk the eggs in a bowl and season with salt and pepper.
  4. Push the vegetables to one side of the skillet and pour the eggs into the other side. Scramble the eggs until fully cooked, about 3-4 minutes.
  5. Divide the spinach, tomatoes, and scrambled eggs between two bowls. Top each bowl with diced avocado and crispy bacon.
