- Eggs - 2 large
- Milk - 1 cup (240ml)
- Salt - 1/4 teaspoon
- Butter - 2 tablespoons (30g), melted
- Ricotta cheese - 1/2 cup (120g)
- Cream cheese - 1/4 cup (60g), softened
- Sugar - 2 tablespoons (25g)
- Vanilla extract - 1 teaspoon
- Fresh blueberries - 1/2 cup (75g)
- Maple syrup - for serving
Steps
- In a mixing bowl, whisk together flour, eggs, milk, and salt until smooth. Let the batter rest for 10 minutes.
- Heat a non-stick skillet over medium heat and lightly grease with butter. Pour about 1/4 cup of the batter into the skillet, swirling to cover the bottom. Cook until edges start to lift, about 1-2 minutes, then flip and cook for another minute. Repeat with remaining batter.
- In another bowl, combine ricotta cheese, cream cheese, sugar, vanilla extract, and fresh blueberries until well mixed.
- Place about 2 tablespoons of the cheese mixture onto the center of each blintz and fold in the sides, then roll from the bottom up to create a filled pancake.
- Heat a bit of butter in the skillet over medium heat. Place the filled blintzes seam-side down and cook until golden brown on both sides, about 2-3 minutes per side.
- Serve warm with a drizzle of maple syrup.
