  • Eggs - 2 large
  • Milk - 1 cup (240ml)
  • Salt - 1/4 teaspoon
  • Butter - 2 tablespoons (30g), melted
  • Ricotta cheese - 1/2 cup (120g)
  • Cream cheese - 1/4 cup (60g), softened
  • Sugar - 2 tablespoons (25g)
  • Vanilla extract - 1 teaspoon
  • Fresh blueberries - 1/2 cup (75g)
  • Maple syrup - for serving

Steps

  1. In a mixing bowl, whisk together flour, eggs, milk, and salt until smooth. Let the batter rest for 10 minutes.
  2. Heat a non-stick skillet over medium heat and lightly grease with butter. Pour about 1/4 cup of the batter into the skillet, swirling to cover the bottom. Cook until edges start to lift, about 1-2 minutes, then flip and cook for another minute. Repeat with remaining batter.
  3. In another bowl, combine ricotta cheese, cream cheese, sugar, vanilla extract, and fresh blueberries until well mixed.
  4. Place about 2 tablespoons of the cheese mixture onto the center of each blintz and fold in the sides, then roll from the bottom up to create a filled pancake.
  5. Heat a bit of butter in the skillet over medium heat. Place the filled blintzes seam-side down and cook until golden brown on both sides, about 2-3 minutes per side.
  6. Serve warm with a drizzle of maple syrup.
