Ingredients

  • Salmon fillets - 2 (about 150g each)
  • Bourbon - 60ml
  • Brown sugar - 30g
  • Soy sauce (Kosher) - 30ml
  • Dijon mustard - 1 tablespoon (15g)
  • Garlic - 2 cloves, minced
  • Fresh ginger, grated - 1 teaspoon
  • Olive oil - 1 tablespoon (15ml)
  • Black pepper - to taste
  • Chives or parsley, chopped - for garnish

Steps

  1. In a small saucepan, combine the bourbon, brown sugar, soy sauce, Dijon mustard, minced garlic, and grated ginger. Bring to a simmer over medium heat, stirring until the sugar dissolves, then reduce the heat and let it simmer for about 10 minutes until slightly thickened.
  2. While the glaze is simmering, preheat your oven to 200°C (400°F).
  3. Line a baking sheet with parchment paper and place the salmon fillets skin-side down. Brush the fillets with olive oil and season with black pepper.
  4. Once the glaze has thickened, brush a generous amount over the salmon fillets, reserving some for later.
  5. Bake the salmon in the preheated oven for 12-15 minutes, or until the fish flakes easily with a fork.
  6. In the last 2 minutes of cooking, brush the salmon with the reserved glaze for an extra layer of flavor.
  7. Remove from the oven, garnish with chopped chives or parsley, and serve immediately.
