- Zucchini, diced - 1 medium
- Green onions, chopped - 2 stalks
- Garlic, minced - 2 cloves
- Soy sauce - 2 tablespoons
- Eggs - 2 large
- Sesame oil - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
Steps
- Heat olive oil in a large skillet or wok over medium heat.
- Add the minced garlic and sauté for about 30 seconds until fragrant.
- Stir in the diced carrot, bell pepper, and zucchini. Cook for 5-7 minutes until the vegetables are tender.
- Push the vegetables to one side of the skillet, and crack the eggs into the cleared space. Scramble the eggs until fully cooked.
- Add the cooked brown rice to the skillet and mix everything together.
