Ingredients

  • Almond flour - 1 cup
  • Coconut flour - 2 tablespoons
  • Baking powder - 1 teaspoon
  • Salt - 1/4 teaspoon
  • Egg - 1 large
  • Coconut milk - 1/4 cup
  • Honey - 1 tablespoon
  • Fresh blueberries - 1/2 cup
  • Coconut oil - for frying

Steps

  1. In a mixing bowl, combine almond flour, coconut flour, baking powder, and salt.
  2. In another bowl, whisk together the egg, coconut milk, and honey until well combined.
  3. Pour the wet ingredients into the dry ingredients and mix until just combined.
  4. Gently fold in the fresh blueberries, being careful not to break them.
  5. Heat a non-stick skillet over medium heat and add a small amount of coconut oil to coat the surface.
  6. Scoop about 1/4 cup of the batter onto the skillet for each bannock, cooking until bubbles form on the surface, about 3-4 minutes.
  7. Flip and cook for an additional 2-3 minutes until golden brown.
  8. Remove from the skillet and repeat with the remaining batter, adding more coconut oil as needed.
  9. Serve warm, drizzled with additional honey if desired.
