- Sour cream - 1/4 cup (60g)
- Vanilla extract - 1/2 teaspoon
- Butter - 2 tablespoons, for frying
- Powdered sugar - for dusting

Steps
- In a mixing bowl, whisk together the flour, eggs, milk, salt, and sugar until smooth. Let the batter rest for 10 minutes.
- Heat a non-stick skillet over medium heat and add a little butter. Pour about 1/4 cup of batter into the skillet, tilting to spread it evenly. Cook for about 1-2 minutes until the edges lift, then flip and cook for another minute. Transfer to a plate and repeat with the remaining batter.
- In a separate bowl, combine the softened cream cheese, sour cream, and vanilla extract until smooth.
- Place a blintz on a plate, add about 2 tablespoons of the cheese mixture in the center, and fold the sides over the filling, then roll it up tightly.
- In the same skillet, melt more butter over medium heat. Place the filled blintzes seam-side down in the skillet and cook for about 2-3 minutes on each side until golden brown.
- Serve warm, dusted with powdered sugar and topped with fresh berries if desired.
