Ingredients

  • All-purpose flour - 1/2 cup (60g)
  • Eggs - 2 large
  • Milk - 1 cup (240ml)
  • Salt - 1/4 teaspoon
  • Sugar - 1 tablespoon
  • Cream cheese - 1/2 cup (120g), softened
  • Sour cream - 1/4 cup (60g)
  • Vanilla extract - 1/2 teaspoon
  • Butter - 2 tablespoons, for frying
  • Powdered sugar - for dusting
  • Fresh berries - for serving (optional)

Steps

  1. In a mixing bowl, whisk together the flour, eggs, milk, salt, and sugar until smooth. Let the batter rest for 10 minutes.
  2. Heat a non-stick skillet over medium heat and add a little butter. Pour about 1/4 cup of batter into the skillet, tilting to spread it evenly. Cook for about 1-2 minutes until the edges lift, then flip and cook for another minute. Transfer to a plate and repeat with the remaining batter.
  3. In a separate bowl, combine the softened cream cheese, sour cream, and vanilla extract until smooth.
  4. Place a blintz on a plate, add about 2 tablespoons of the cheese mixture in the center, and fold the sides over the filling, then roll it up tightly.
  5. In the same skillet, melt more butter over medium heat. Place the filled blintzes seam-side down in the skillet and cook for about 2-3 minutes on each side until golden brown.
  6. Serve warm, dusted with powdered sugar and topped with fresh berries if desired.
