- Vegetable broth - 1.5 cups
- Olive oil - 1 tablespoon
- Onion, finely chopped - 1 small
- Garlic, minced - 2 cloves
- Cumin - 1 teaspoon
- Chili powder - 0.5 teaspoon
- Salt - 0.5 teaspoon
- Black pepper - 0.25 teaspoon
- Fresh cilantro, chopped - 2 tablespoons
- Lime, juiced - 1
- Avocado, diced - 0.5 (for topping)
- Sour cream (optional) - 2 tablespoons
Steps
- In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Add the minced garlic, cumin, chili powder, salt, and black pepper to the pan. Cook for another minute until fragrant.
- Stir in the rice, ensuring it is well-coated with the oil and spices. Toast the rice for about 2 minutes.
- Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat to low, cover the saucepan, and simmer for 15 minutes, or until the rice is tender and the liquid is absorbed.

- Serve the black bean rice topped with diced avocado and a dollop of sour cream if desired.
