Ingredients

  • Long-grain white rice - 1 cup
  • Black beans (canned, drained and rinsed) - 1 cup
  • Vegetable broth - 1.5 cups
  • Olive oil - 1 tablespoon
  • Onion, finely chopped - 1 small
  • Garlic, minced - 2 cloves
  • Cumin - 1 teaspoon
  • Chili powder - 0.5 teaspoon
  • Salt - 0.5 teaspoon
  • Black pepper - 0.25 teaspoon
  • Fresh cilantro, chopped - 2 tablespoons
  • Lime, juiced - 1
  • Avocado, diced - 0.5 (for topping)
  • Sour cream (optional) - 2 tablespoons

Steps

  1. In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  2. Add the minced garlic, cumin, chili powder, salt, and black pepper to the pan. Cook for another minute until fragrant.
  3. Stir in the rice, ensuring it is well-coated with the oil and spices. Toast the rice for about 2 minutes.
  4. Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat to low, cover the saucepan, and simmer for 15 minutes, or until the rice is tender and the liquid is absorbed.
  5. Once cooked, remove from heat and gently fold in the black beans, cilantro, and lime juice. Let it sit covered for an additional 5 minutes.
  6. Serve the black bean rice topped with diced avocado and a dollop of sour cream if desired.
