Ingredients

  • Quinoa - 1 cup
  • Black beans (canned, drained and rinsed) - 1 cup
  • Cherry tomatoes (halved) - 1 cup
  • Red bell pepper (diced) - 1/2 cup
  • Cucumber (diced) - 1/2 cup
  • Red onion (finely chopped) - 1/4 cup
  • Fresh cilantro (chopped) - 1/4 cup
  • Olive oil - 2 tablespoons
  • Lime juice - 2 tablespoons
  • Cumin - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. Rinse the quinoa under cold water to remove any bitterness.
  2. In a medium saucepan, combine quinoa with 2 cups of water and bring to a boil.
  3. Once boiling, reduce the heat to low, cover, and simmer for 15 minutes or until quinoa is fluffy and water is absorbed.
