Ingredients

  • 1 cup cooked quinoa
  • 1 can (400g) black beans, rinsed and drained
  • 1/2 cup breadcrumbs
  • 1/4 cup diced red onion
  • 1/4 cup diced bell pepper
  • 1 clove garlic, minced
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1/2 tsp smoked paprika
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 egg
  • 2 tbsp fresh cilantro, chopped
  • 2 tbsp olive oil (for cooking)
  • 2 whole wheat burger buns
  • Lettuce, tomato, and avocado (for serving)

Steps

  1. In a large bowl, mash the black beans with a fork until mostly smooth, leaving some chunks for texture.
  2. Add the cooked quinoa, breadcrumbs, diced red onion, diced bell pepper, minced garlic, cumin, chili powder, smoked paprika, salt, pepper, egg, and cilantro to the bowl. Mix until combined.
  3. Shape the mixture into two patties, about 1 inch thick.
  4. Heat the olive oil in a skillet over medium heat. Once hot, add the patties and cook for about 5-7 minutes on each side, or until golden brown and heated through.
  5. Toast the whole wheat burger buns lightly in the skillet for added crunch.
  6. Assemble the burgers by placing the patties on the buns and topping with lettuce, tomato, and avocado. Serve immediately.
