- 1/2 cup breadcrumbs
- 1/4 cup diced red onion
- 1/4 cup diced bell pepper
- 1 clove garlic, minced
- 1 tsp ground cumin
- 1 tsp chili powder
- 1/2 tsp smoked paprika
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1 egg
- 2 tbsp fresh cilantro, chopped
- 2 tbsp olive oil (for cooking)
- 2 whole wheat burger buns
- Lettuce, tomato, and avocado (for serving)
Steps
- In a large bowl, mash the black beans with a fork until mostly smooth, leaving some chunks for texture.
- Add the cooked quinoa, breadcrumbs, diced red onion, diced bell pepper, minced garlic, cumin, chili powder, smoked paprika, salt, pepper, egg, and cilantro to the bowl. Mix until combined.
- Shape the mixture into two patties, about 1 inch thick.
- Heat the olive oil in a skillet over medium heat. Once hot, add the patties and cook for about 5-7 minutes on each side, or until golden brown and heated through.
- Toast the whole wheat burger buns lightly in the skillet for added crunch.
