Ingredients

  • Black beans - 1 cup, cooked and drained
  • Cheddar cheese - 1 cup, shredded
  • Corn tortillas - 4 large
  • Red bell pepper - 1 small, diced
  • Onion - 1 small, diced
  • Olive oil - 2 tablespoons
  • Cumin - 1 teaspoon
  • Garlic powder - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh cilantro - 1/4 cup, chopped (optional)

Steps

  1. Heat 1 tablespoon of olive oil in a skillet over medium heat.
  2. Add the diced onion and red bell pepper, sautéing until they are soft, about 5 minutes.
  3. Stir in the cooked black beans, cumin, garlic powder, salt, and black pepper; cook for an additional 3-4 minutes until heated through.
  4. Remove the skillet from heat and mix in the chopped cilantro if using.
  5. In another skillet, heat the remaining tablespoon of olive oil over medium heat.
  6. Place one tortilla in the skillet, and sprinkle half of the shredded cheddar cheese on one half of the tortilla.
  7. Spoon half of the black bean mixture over the cheese and fold the tortilla over.
  8. Cook for 2-3 minutes on each side, until the cheese is melted and the tortilla is golden brown.
  9. Repeat with the second tortilla and filling.
  10. Slice the quesadillas into wedges and serve warm.
