- Corn tortillas - 4 large
- Red bell pepper - 1 small, diced
- Onion - 1 small, diced
- Olive oil - 2 tablespoons
- Cumin - 1 teaspoon
- Garlic powder - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh cilantro - 1/4 cup, chopped (optional)
Steps
- Heat 1 tablespoon of olive oil in a skillet over medium heat.
- Add the diced onion and red bell pepper, sautéing until they are soft, about 5 minutes.
- Stir in the cooked black beans, cumin, garlic powder, salt, and black pepper; cook for an additional 3-4 minutes until heated through.
- Remove the skillet from heat and mix in the chopped cilantro if using.
- In another skillet, heat the remaining tablespoon of olive oil over medium heat.
- Place one tortilla in the skillet, and sprinkle half of the shredded cheddar cheese on one half of the tortilla.
- Spoon half of the black bean mixture over the cheese and fold the tortilla over.
- Cook for 2-3 minutes on each side, until the cheese is melted and the tortilla is golden brown.
- Repeat with the second tortilla and filling.
- Slice the quesadillas into wedges and serve warm.
