  • Green onion - 2 stalks (chopped)
  • Cumin - 1 tsp
  • Chili powder - 1 tsp
  • Garlic powder - 1/2 tsp
  • Salt - 1/4 tsp
  • Olive oil - 1 tbsp
  • Whole wheat tortillas - 2 large
  • Avocado - 1 medium (sliced, for serving)
  • Fresh cilantro - 2 tbsp (chopped, for garnish)

Steps

  1. In a skillet, heat olive oil over medium heat. Add the diced red bell pepper and sauté for 3-4 minutes until softened.
  2. Add the black beans, corn, cumin, chili powder, garlic powder, and salt to the skillet. Stir well and cook for another 5 minutes, allowing the flavors to meld.
  3. Lay one tortilla on a flat surface and spread half of the black bean mixture evenly over one half of the tortilla.
  4. Fold the tortilla in half over the filling and place it in the skillet. Cook for 2-3 minutes on each side until golden brown and crispy.
  5. Repeat the process with the second tortilla and remaining filling.
  6. Slice the quesadillas into wedges and serve with sliced avocado and a sprinkle of fresh cilantro.
