- Salt - 1/4 tsp
- Olive oil - 1 tbsp
- Whole wheat tortillas - 2 large
- Avocado - 1 medium (sliced, for serving)
- Fresh cilantro - 2 tbsp (chopped, for garnish)
Steps
- In a skillet, heat olive oil over medium heat. Add the diced red bell pepper and sauté for 3-4 minutes until softened.
- Add the black beans, corn, cumin, chili powder, garlic powder, and salt to the skillet. Stir well and cook for another 5 minutes, allowing the flavors to meld.
- Lay one tortilla on a flat surface and spread half of the black bean mixture evenly over one half of the tortilla.
- Fold the tortilla in half over the filling and place it in the skillet. Cook for 2-3 minutes on each side until golden brown and crispy.
- Repeat the process with the second tortilla and remaining filling.
- Slice the quesadillas into wedges and serve with sliced avocado and a sprinkle of fresh cilantro.
