Ingredients
- Black beans - 1 can (400g), drained and rinsed
- Corn tortillas - 4 small (about 20cm diameter)
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Cumin - 1 teaspoon
- Chili powder - 1 teaspoon
- Olive oil - 1 tablespoon
- Tomato sauce - 200g
- Vegetable broth - 100ml
- Cheddar cheese - 100g, shredded
- Fresh cilantro - 2 tablespoons, chopped
- Lime - 1, cut into wedges
- Salt - to taste
- Pepper - to taste
Steps
- Preheat your oven to 180°C (350°F).
- In a skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for 3-4 minutes until softened.
- Add the minced garlic, cumin, and chili powder to the skillet, cooking for another minute until fragrant.
- Stir in the black beans, salt, and pepper, cooking until heated through. Remove from heat.
- In a separate bowl, mix the tomato sauce and vegetable broth together.
- Spread a small amount of the sauce mixture on the bottom of a baking dish.
- To assemble the enchiladas, take a corn tortilla, spoon about 1/4 of the black bean mixture down the center, sprinkle with some cheddar cheese, and roll it up. Place it seam-side down in the baking dish. Repeat for the remaining tortillas.
- Pour the remaining sauce mixture over the rolled enchiladas, and sprinkle with the remaining cheddar cheese.
- Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly.
- Garnish with fresh cilantro and serve with lime wedges.
