Ingredients

  • Black beans - 1 can (400g), drained and rinsed
  • Corn tortillas - 4 small (about 20cm diameter)
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Cumin - 1 teaspoon
  • Chili powder - 1 teaspoon
  • Olive oil - 1 tablespoon
  • Tomato sauce - 200g
  • Vegetable broth - 100ml
  • Cheddar cheese - 100g, shredded
  • Fresh cilantro - 2 tablespoons, chopped
  • Lime - 1, cut into wedges
  • Salt - to taste
  • Pepper - to taste

Steps

  1. Preheat your oven to 180°C (350°F).
  2. In a skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for 3-4 minutes until softened.
  3. Add the minced garlic, cumin, and chili powder to the skillet, cooking for another minute until fragrant.
  4. Stir in the black beans, salt, and pepper, cooking until heated through. Remove from heat.
  5. In a separate bowl, mix the tomato sauce and vegetable broth together.
  6. Spread a small amount of the sauce mixture on the bottom of a baking dish.
  7. To assemble the enchiladas, take a corn tortilla, spoon about 1/4 of the black bean mixture down the center, sprinkle with some cheddar cheese, and roll it up. Place it seam-side down in the baking dish. Repeat for the remaining tortillas.
  8. Pour the remaining sauce mixture over the rolled enchiladas, and sprinkle with the remaining cheddar cheese.
  9. Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly.
  10. Garnish with fresh cilantro and serve with lime wedges.
