Ingredients

  • Bison stew meat - 400 grams
  • Carrots - 2 medium, diced
  • Celery - 2 stalks, diced
  • Onion - 1 medium, chopped
  • Garlic - 2 cloves, minced
  • Beef broth - 500 ml (preferably homemade or low-sodium)
  • Olive oil - 2 tablespoons
  • Bay leaf - 1
  • Thyme - 1 teaspoon (dried or fresh)
  • Salt - 1 teaspoon (to taste)
  • Black pepper - 1/2 teaspoon (to taste)
  • Sweet potatoes - 1 medium, diced
  • Mushrooms - 100 grams, sliced

Steps

  1. Heat olive oil in a large pot over medium heat. Add the chopped onions and sauté until translucent, about 5 minutes.
  2. Add the minced garlic, diced carrots, and diced celery to the pot. Cook for an additional 5 minutes, stirring occasionally.
  3. Increase the heat to medium-high and add the bison stew meat. Sear the meat on all sides until browned, approximately 5-7 minutes.
  4. Pour in the beef broth and add the bay leaf, thyme, salt, and pepper. Bring the mixture to a boil.
  5. Once boiling, reduce the heat to low, cover the pot, and let it simmer for 45 minutes.
  6. After 45 minutes, add the diced sweet potatoes and sliced mushrooms to the stew. Stir well and continue to simmer for another 30 minutes, or until the vegetables are tender and the bison is fork-tender.
  7. Remove the bay leaf before serving. Taste and adjust seasoning as necessary.
