- Ground bison - 300 grams
- Cauliflower - 400 grams
- Carrots - 100 grams, diced
- Celery - 100 grams, diced
- Onion - 1 medium, diced
- Garlic - 2 cloves, minced
- Beef broth - 150 ml
- Olive oil - 2 tablespoons
- Thyme - 1 teaspoon, dried
- Rosemary - 1 teaspoon, dried
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Coconut milk - 100 ml
- Parsley - 1 tablespoon, chopped (for garnish)
Steps
- Preheat your oven to 200°C (400°F).
- In a large pot, bring water to a boil and add the cauliflower florets. Cook for about 10-12 minutes until tender, then drain and set aside.
- In a skillet, heat 2 tablespoons of olive oil over medium heat. Add the diced onion, carrots, and celery, and sauté for about 5 minutes until softened.
- Add the minced garlic, thyme, rosemary, salt, and black pepper to the skillet, and cook for another 2 minutes until fragrant.
- Stir in the ground bison and cook until browned, about 7-10 minutes, breaking it up as it cooks.
- Pour in the beef broth and let it simmer for 5 minutes, allowing the flavors to meld together.
- While the meat mixture simmers, blend the cooked cauliflower with coconut milk until smooth and creamy. Season with salt and pepper to taste.
- Transfer the bison mixture to a baking dish and spread it out evenly. Top with the cauliflower mash, smoothing it over the meat mixture.
- Place the baking dish in the preheated oven and bake for 20-25 minutes until the top is golden brown.
- Remove from the oven, garnish with chopped parsley, and serve hot.
