Ingredients

  • Ground bison - 300 grams
  • Cauliflower - 400 grams
  • Carrots - 100 grams, diced
  • Celery - 100 grams, diced
  • Onion - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Beef broth - 150 ml
  • Olive oil - 2 tablespoons
  • Thyme - 1 teaspoon, dried
  • Rosemary - 1 teaspoon, dried
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Coconut milk - 100 ml
  • Parsley - 1 tablespoon, chopped (for garnish)

Steps

  1. Preheat your oven to 200°C (400°F).
  2. In a large pot, bring water to a boil and add the cauliflower florets. Cook for about 10-12 minutes until tender, then drain and set aside.
  3. In a skillet, heat 2 tablespoons of olive oil over medium heat. Add the diced onion, carrots, and celery, and sauté for about 5 minutes until softened.
  4. Add the minced garlic, thyme, rosemary, salt, and black pepper to the skillet, and cook for another 2 minutes until fragrant.
  5. Stir in the ground bison and cook until browned, about 7-10 minutes, breaking it up as it cooks.
  6. Pour in the beef broth and let it simmer for 5 minutes, allowing the flavors to meld together.
  7. While the meat mixture simmers, blend the cooked cauliflower with coconut milk until smooth and creamy. Season with salt and pepper to taste.
  8. Transfer the bison mixture to a baking dish and spread it out evenly. Top with the cauliflower mash, smoothing it over the meat mixture.
  9. Place the baking dish in the preheated oven and bake for 20-25 minutes until the top is golden brown.
  10. Remove from the oven, garnish with chopped parsley, and serve hot.
