Ingredients

  • Bison brisket - 500 grams
  • Olive oil - 2 tablespoons
  • Garlic powder - 1 teaspoon
  • Onion powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Cumin - 1 teaspoon
  • Black pepper - 1 teaspoon
  • Sea salt - 1 teaspoon
  • Apple cider vinegar - 2 tablespoons
  • Beef broth (low sodium) - 250 ml
  • Fresh rosemary - 2 sprigs

Steps

  1. Preheat your oven to 150°C (300°F).
  2. In a small bowl, mix the garlic powder, onion powder, paprika, cumin, black pepper, and sea salt to create a spice rub.
  3. Rub the bison brisket with olive oil and then generously coat it with the spice mix, ensuring it's evenly covered.
  4. In a large oven-safe pot, heat a bit more olive oil over medium-high heat and sear the brisket on all sides until browned, about 3-4 minutes per side.
  5. Remove the brisket from the pot and set it aside. In the same pot, add the apple cider vinegar and scrape the bottom to deglaze.
  6. Pour in the beef broth and stir in the fresh rosemary, then return the brisket to the pot.
  7. Cover the pot with a lid or aluminum foil and transfer it to the preheated oven.
  8. Cook for 5 hours, or until the brisket is fork-tender.
  9. Once done, remove from the oven and let the brisket rest for 15 minutes before slicing.
