Ingredients
- Bison brisket - 500 grams
- Olive oil - 2 tablespoons
- Garlic powder - 1 teaspoon
- Onion powder - 1 teaspoon
- Paprika - 1 teaspoon
- Cumin - 1 teaspoon
- Black pepper - 1 teaspoon
- Sea salt - 1 teaspoon
- Apple cider vinegar - 2 tablespoons
- Beef broth (low sodium) - 250 ml
- Fresh rosemary - 2 sprigs
Steps
- Preheat your oven to 150°C (300°F).
- In a small bowl, mix the garlic powder, onion powder, paprika, cumin, black pepper, and sea salt to create a spice rub.
- Rub the bison brisket with olive oil and then generously coat it with the spice mix, ensuring it's evenly covered.
- In a large oven-safe pot, heat a bit more olive oil over medium-high heat and sear the brisket on all sides until browned, about 3-4 minutes per side.
- Remove the brisket from the pot and set it aside. In the same pot, add the apple cider vinegar and scrape the bottom to deglaze.
- Pour in the beef broth and stir in the fresh rosemary, then return the brisket to the pot.
- Cover the pot with a lid or aluminum foil and transfer it to the preheated oven.
- Cook for 5 hours, or until the brisket is fork-tender.
- Once done, remove from the oven and let the brisket rest for 15 minutes before slicing.
