  • Ground bison - 200 grams
  • Sweet potato - 200 grams, diced
  • Red bell pepper - 1 medium, diced
  • Onion - 1 small, diced
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Paprika - 1/2 teaspoon

Steps

  1. Heat 1 tablespoon of olive oil in a large skillet over medium heat.
  2. Add the diced sweet potatoes and cook for about 10 minutes, stirring occasionally, until they begin to soften.
  3. Add the diced onion and red bell pepper to the skillet, cooking for another 5 minutes until the vegetables are tender.
  4. Stir in the minced garlic, paprika, salt, and black pepper, cooking for 1 minute until fragrant.
  5. Push the vegetables to one side of the skillet and add the remaining tablespoon of olive oil to the empty side.
  6. Add the ground bison to the skillet, breaking it apart with a spatula, and cook until browned and fully cooked, about 5-7 minutes.
  7. Mix the bison with the vegetables, then sprinkle with chopped parsley before serving.
  8. Serve hot, optionally garnished with additional parsley.
