- Fresh parsley - 2 tablespoons, chopped
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Paprika - 1/2 teaspoon
Steps
- Heat 1 tablespoon of olive oil in a large skillet over medium heat.
- Add the diced sweet potatoes and cook for about 10 minutes, stirring occasionally, until they begin to soften.
- Add the diced onion and red bell pepper to the skillet, cooking for another 5 minutes until the vegetables are tender.
