- Bison bones (marrow bones and knuckles) - 500 grams
- Water - 1.5 liters
- Carrots - 2 medium, chopped
- Celery - 2 stalks, chopped
- Onion - 1 large, quartered
- Garlic - 4 cloves, smashed
- Apple cider vinegar - 2 tablespoons
- Bay leaves - 2
- Thyme - 1 teaspoon
- Black peppercorns - 1 teaspoon
- Salt - to taste
Steps
- Preheat the oven to 200°C (400°F).
- Place the bison bones on a baking sheet and roast them in the oven for 30 minutes until browned.
- In a large stockpot, add the roasted bison bones, water, chopped carrots, chopped celery, quartered onion, smashed garlic, apple cider vinegar, bay leaves, thyme, and black peppercorns.
- Bring the mixture to a boil over medium-high heat, then reduce the heat to low and simmer for at least 4 hours (up to 12 hours for deeper flavor).
- Skim off any foam or impurities that rise to the surface during cooking.
- After simmering, remove the pot from heat and let it cool slightly.
- Strain the broth through a fine-mesh sieve into another pot or large bowl, discarding solids.
- Season the broth with salt to taste and serve hot.
