- Cauliflower - 1 small head (about 400 grams)

- Red bell pepper - 1 medium, diced
- Carrot - 1 medium, diced
- Garlic - 2 cloves, minced
- Onion - 1 small, diced
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
Steps
- Begin by preparing the cauliflower rice. Remove the leaves and stem from the cauliflower, then cut it into florets.
- In a food processor, pulse the cauliflower florets until they resemble grains of rice. Set aside.
- Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the diced onion and garlic, sautéing until fragrant and translucent, about 3-4 minutes.
- Add the diced red bell pepper and carrot to the skillet and cook for another 3-4 minutes until they begin to soften.
- Push the vegetables to one side of the skillet and add the ground bison to the empty side. Cook the bison until browned, breaking it apart with a spatula, about 5-7 minutes.
- Once the bison is fully cooked, mix it with the vegetables. Stir in the cumin, paprika, salt, and black pepper.
- Add the cauliflower rice to the skillet, mixing everything together. Cook for an additional 5-7 minutes, stirring occasionally, until the cauliflower is tender.
- Drizzle with the remaining tablespoon of olive oil and garnish with fresh parsley before serving.
