Ingredients

  • Basmati rice - 1 cup
  • Chicken thighs, boneless and skinless - 250 grams
  • Onion, thinly sliced - 1 medium
  • Garlic, minced - 2 cloves
  • Ginger, grated - 1 tablespoon
  • Tomato, diced - 1 medium
  • Yogurt - 1/4 cup
  • Biryani spice mix - 2 teaspoons
  • Turmeric powder - 1/2 teaspoon
  • Cilantro, chopped - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Vegetable oil - 2 tablespoons
  • Salt - to taste
  • Water - 1.5 cups
  • Saffron strands - a pinch (optional)

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes.
  2. In a large pot, heat the vegetable oil over medium heat. Add the sliced onions and sauté until golden brown.
  3. Add the minced garlic and grated ginger to the pot, and cook for another minute until fragrant.
  4. Stir in the diced tomatoes and cook until they soften, about 3 minutes.
  5. Add the chicken thighs to the pot, followed by the biryani spice mix, turmeric powder, and salt. Cook until the chicken is browned on all sides.
  6. Stir in the yogurt and cook for another 2-3 minutes to incorporate the flavors.
  7. Drain the soaked rice and add it to the pot, gently mixing it with the chicken and spices.
  8. Pour in the water and bring the mixture to a boil. Once boiling, reduce the heat to low, cover the pot, and let it simmer for 20 minutes.
  9. After 20 minutes, remove the pot from heat and let it sit, covered, for an additional 10 minutes.
  10. Fluff the biryani with a fork, then drizzle with lemon juice, sprinkle with chopped cilantro, and saffron strands if using.
