- Garlic, minced - 2 cloves
- Ginger, grated - 1 tablespoon
- Tomato, diced - 1 medium
- Yogurt - 1/4 cup
- Biryani spice mix - 2 teaspoons
- Turmeric powder - 1/2 teaspoon
- Cilantro, chopped - 2 tablespoons
- Lemon juice - 1 tablespoon
- Vegetable oil - 2 tablespoons
- Salt - to taste
- Water - 1.5 cups
- Saffron strands - a pinch (optional)
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes.
- In a large pot, heat the vegetable oil over medium heat. Add the sliced onions and sauté until golden brown.
- Add the minced garlic and grated ginger to the pot, and cook for another minute until fragrant.
- Stir in the diced tomatoes and cook until they soften, about 3 minutes.
- Add the chicken thighs to the pot, followed by the biryani spice mix, turmeric powder, and salt. Cook until the chicken is browned on all sides.
- Stir in the yogurt and cook for another 2-3 minutes to incorporate the flavors.
- Drain the soaked rice and add it to the pot, gently mixing it with the chicken and spices.
- Pour in the water and bring the mixture to a boil. Once boiling, reduce the heat to low, cover the pot, and let it simmer for 20 minutes.
- After 20 minutes, remove the pot from heat and let it sit, covered, for an additional 10 minutes.
- Fluff the biryani with a fork, then drizzle with lemon juice, sprinkle with chopped cilantro, and saffron strands if using.
