- Olive oil - 10 ml
- Onion - 50 grams, finely chopped
- Poppy seeds - 5 grams
- Cream cheese - 100 grams
- Fresh chives - 10 grams, chopped (optional)
Steps
- In a small bowl, mix warm water, sugar, and yeast. Let it sit for about 5-10 minutes until frothy.
- In a large bowl, combine flour and salt. Make a well in the center and add the yeast mixture and olive oil. Mix until a dough forms.
- Knead the dough on a floured surface for about 8-10 minutes until smooth and elastic. Place in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.
- While the dough is rising, prepare the onion topping. Sauté the finely chopped onion in a little olive oil over medium heat until translucent and slightly caramelized. Set aside to cool.
- Preheat the oven to 220°C (425°F) and line a baking sheet with parchment paper.
- Once the dough has risen, punch it down and divide it into 2 equal pieces. Shape each piece into a ball, then flatten it into a disc about 1 inch thick.
- Using your fingers, create a small well in the center of each disc and fill it with sautéed onions and poppy seeds.
- Place the bialys on the prepared baking sheet and let them rest for 15 minutes. Bake for 15-20 minutes or until golden brown.
- Allow bialys to cool slightly before spreading cream cheese on top. Optionally, sprinkle with chopped chives before serving.
