Ingredients

  • All-purpose flour - 250 grams
  • Warm water - 150 ml
  • Active dry yeast - 5 grams
  • Sugar - 5 grams
  • Salt - 5 grams
  • Olive oil - 10 ml
  • Onion - 50 grams, finely chopped
  • Poppy seeds - 5 grams
  • Cream cheese - 100 grams
  • Fresh chives - 10 grams, chopped (optional)

Steps

  1. In a small bowl, mix warm water, sugar, and yeast. Let it sit for about 5-10 minutes until frothy.
  2. In a large bowl, combine flour and salt. Make a well in the center and add the yeast mixture and olive oil. Mix until a dough forms.
  3. Knead the dough on a floured surface for about 8-10 minutes until smooth and elastic. Place in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.
  4. While the dough is rising, prepare the onion topping. Sauté the finely chopped onion in a little olive oil over medium heat until translucent and slightly caramelized. Set aside to cool.
  5. Preheat the oven to 220°C (425°F) and line a baking sheet with parchment paper.
  6. Once the dough has risen, punch it down and divide it into 2 equal pieces. Shape each piece into a ball, then flatten it into a disc about 1 inch thick.
  7. Using your fingers, create a small well in the center of each disc and fill it with sautéed onions and poppy seeds.
  8. Place the bialys on the prepared baking sheet and let them rest for 15 minutes. Bake for 15-20 minutes or until golden brown.
  9. Allow bialys to cool slightly before spreading cream cheese on top. Optionally, sprinkle with chopped chives before serving.
