Ingredients
- All-purpose flour - 100g
- Unsalted butter - 50g (cold, cubed)
- Granulated sugar - 25g
- Salt - 1/4 tsp
- Cold water - 2-3 tbsp
- Milk - 200ml
- Egg yolk - 1 (large)
- Vanilla extract - 1 tsp
- Cornstarch - 15g
- Mixed berries (strawberries, blueberries, raspberries) - 150g
- Powdered sugar - for dusting
Steps
- Preheat the oven to 180°C (350°F).
- In a mixing bowl, combine the flour, granulated sugar, and salt. Add the cold butter and mix until the mixture resembles coarse crumbs.
- Gradually add cold water, one tablespoon at a time, mixing until the dough comes together. Shape the dough into a disk, wrap in plastic, and refrigerate for 30 minutes.
- Roll out the chilled dough on a lightly floured surface to fit a tart pan. Press the dough into the pan and trim the edges. Prick the bottom with a fork.
- Blind bake the crust for 15-20 minutes until golden. Remove from the oven and let it cool.
- In a saucepan over medium heat, combine the milk and half of the sugar. In a separate bowl, whisk the egg yolk, cornstarch, vanilla extract, and remaining sugar until smooth.
- Once the milk is warm, slowly pour it into the egg mixture, whisking constantly. Return this mixture to the saucepan and cook over low heat, stirring until it thickens.
- Pour the custard into the cooled tart shell and smooth the top. Allow to cool to room temperature.
- Arrange the mixed berries on top of the custard. Dust with powdered sugar before serving.
