Ingredients

  • All-purpose flour - 100g
  • Unsalted butter - 50g (cold, cubed)
  • Granulated sugar - 25g
  • Salt - 1/4 tsp
  • Cold water - 2-3 tbsp
  • Milk - 200ml
  • Egg yolk - 1 (large)
  • Vanilla extract - 1 tsp
  • Cornstarch - 15g
  • Mixed berries (strawberries, blueberries, raspberries) - 150g
  • Powdered sugar - for dusting

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a mixing bowl, combine the flour, granulated sugar, and salt. Add the cold butter and mix until the mixture resembles coarse crumbs.
  3. Gradually add cold water, one tablespoon at a time, mixing until the dough comes together. Shape the dough into a disk, wrap in plastic, and refrigerate for 30 minutes.
  4. Roll out the chilled dough on a lightly floured surface to fit a tart pan. Press the dough into the pan and trim the edges. Prick the bottom with a fork.
  5. Blind bake the crust for 15-20 minutes until golden. Remove from the oven and let it cool.
  6. In a saucepan over medium heat, combine the milk and half of the sugar. In a separate bowl, whisk the egg yolk, cornstarch, vanilla extract, and remaining sugar until smooth.
  7. Once the milk is warm, slowly pour it into the egg mixture, whisking constantly. Return this mixture to the saucepan and cook over low heat, stirring until it thickens.
  8. Pour the custard into the cooled tart shell and smooth the top. Allow to cool to room temperature.
  9. Arrange the mixed berries on top of the custard. Dust with powdered sugar before serving.
