Ingredients

  • Quinoa - 1 cup (170g)
  • Water - 2 cups (480ml)
  • Mixed berries (strawberries, blueberries, raspberries) - 1 cup (150g)
  • Honey - 2 tablespoons (30ml)
  • Almonds, chopped - 1/4 cup (35g)
  • Fresh mint leaves, chopped - 2 tablespoons
  • Lemon juice - 1 tablespoon (15ml)
  • Cinnamon - 1/2 teaspoon
  • Salt - 1/4 teaspoon

Steps

  1. Rinse the quinoa under cold water to remove any bitterness.
  2. In a medium saucepan, combine the rinsed quinoa and water, and bring to a boil.
  3. Once boiling, reduce heat to low, cover, and simmer for about 15 minutes or until the quinoa is cooked and water is absorbed.
  4. Remove from heat and let it sit, covered, for 5 minutes, then fluff with a fork.
  5. In a large bowl, combine the cooked quinoa, mixed berries, chopped mint, lemon juice, honey, cinnamon, and salt.
  6. Gently toss the ingredients together until well combined.
  7. Serve the salad in bowls, topped with chopped almonds for extra crunch.
