- Ice water - 2 to 3 tablespoons (30-45ml)
- Mixed berries (strawberries, blueberries, raspberries) - 1.5 cups (225g)
- Cornstarch - 1 tablespoon (8g)
- Lemon juice - 1 teaspoon (5ml)
- Vanilla extract - 1/2 teaspoon (2.5ml)
- Cinnamon - 1/4 teaspoon (1g)
- Sugar (coconut or cane) - 1 tablespoon (12g) for filling and extra for dusting
Steps
- In a mixing bowl, combine the all-purpose flour and a pinch of salt.
- Add the solid coconut oil and mix using your fingers or a pastry cutter until the mixture resembles coarse crumbs.
- Stir in the maple syrup and ice water, adding just enough water until the dough comes together.
- Form the dough into a disc, wrap it in plastic wrap, and refrigerate for 30 minutes.
- Preheat the oven to 190°C (375°F) and line a baking sheet with parchment paper.
- In another bowl, mix the mixed berries, cornstarch, lemon juice, vanilla extract, cinnamon, and sugar until well combined.
- Roll out the chilled dough on a floured surface into a rough circle about 1/4 inch thick.
- Transfer the dough to the prepared baking sheet and spoon the berry mixture into the center, leaving a 2-inch border.
- Fold the edges of the dough over the berries, pleating as you go to create a rustic edge.
- Sprinkle a little extra sugar on top of the crust.
- Bake for 25-30 minutes or until the crust is golden and the berries are bubbling.
- Allow to cool for a few minutes before slicing and serving.
