  • All-purpose flour - 1 cup (120g)
  • Coconut oil, solid - 4 tablespoons (60g)
  • Maple syrup - 2 tablespoons (30ml)
  • Ice water - 2 to 3 tablespoons (30-45ml)
  • Mixed berries (strawberries, blueberries, raspberries) - 1.5 cups (225g)
  • Cornstarch - 1 tablespoon (8g)
  • Lemon juice - 1 teaspoon (5ml)
  • Vanilla extract - 1/2 teaspoon (2.5ml)
  • Cinnamon - 1/4 teaspoon (1g)
  • Sugar (coconut or cane) - 1 tablespoon (12g) for filling and extra for dusting

Steps

  1. In a mixing bowl, combine the all-purpose flour and a pinch of salt.
  2. Add the solid coconut oil and mix using your fingers or a pastry cutter until the mixture resembles coarse crumbs.
  3. Stir in the maple syrup and ice water, adding just enough water until the dough comes together.
  4. Form the dough into a disc, wrap it in plastic wrap, and refrigerate for 30 minutes.
  5. Preheat the oven to 190°C (375°F) and line a baking sheet with parchment paper.
  6. In another bowl, mix the mixed berries, cornstarch, lemon juice, vanilla extract, cinnamon, and sugar until well combined.
  7. Roll out the chilled dough on a floured surface into a rough circle about 1/4 inch thick.
  8. Transfer the dough to the prepared baking sheet and spoon the berry mixture into the center, leaving a 2-inch border.
  9. Fold the edges of the dough over the berries, pleating as you go to create a rustic edge.
  10. Sprinkle a little extra sugar on top of the crust.
  11. Bake for 25-30 minutes or until the crust is golden and the berries are bubbling.
  12. Allow to cool for a few minutes before slicing and serving.
