- Coconut yogurt - 200g
- Chopped nuts (almonds or walnuts) - 30g
- Chia seeds - 2 tablespoons
Steps
- Preheat the oven to 180°C (350°F).
- In a bowl, mix the rolled oats, almond flour, melted coconut oil, cinnamon, and chopped nuts until well combined.
- Spread the mixture evenly on a baking tray and bake for 15 minutes, stirring halfway through, until golden brown.
- While the crumble is baking, prepare the berry layer by combining the mixed berries, maple syrup, and lemon juice in a bowl. Gently toss to coat the berries.
- Once the crumble has cooled, layer the parfait by starting with a layer of coconut yogurt at the bottom of two serving glasses.
