  • Almond flour - 50g
  • Coconut oil - 3 tablespoons, melted
  • Cinnamon - 1 teaspoon
  • Coconut yogurt - 200g
  • Chopped nuts (almonds or walnuts) - 30g
  • Chia seeds - 2 tablespoons

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a bowl, mix the rolled oats, almond flour, melted coconut oil, cinnamon, and chopped nuts until well combined.
  3. Spread the mixture evenly on a baking tray and bake for 15 minutes, stirring halfway through, until golden brown.
  4. While the crumble is baking, prepare the berry layer by combining the mixed berries, maple syrup, and lemon juice in a bowl. Gently toss to coat the berries.
  5. Once the crumble has cooled, layer the parfait by starting with a layer of coconut yogurt at the bottom of two serving glasses.
  6. Add a layer of the berry mixture, followed by a layer of the oat crumble. Repeat the layers until the glasses are filled, finishing with a layer of crumble on top.
