- Almond flour - 30 grams
- Baking powder - 1 teaspoon
- Salt - 1/4 teaspoon
- Unsalted butter - 30 grams, melted
- Milk (dairy or non-dairy) - 60 ml
- Vanilla extract - 1/2 teaspoon
Steps
- Preheat your oven to 180°C (350°F).
- In a mixing bowl, combine the mixed berries, 15 grams of sugar, and lemon juice. Stir gently and set aside.
- In another bowl, whisk together gluten-free all-purpose flour, almond flour, baking powder, salt, and the remaining 15 grams of sugar.
- Add the melted butter, milk, and vanilla extract to the dry ingredients. Stir until just combined; do not overmix.
- In a small greased baking dish, pour the berry mixture evenly across the bottom.
- Pour the cobbler batter over the berries, spreading it gently to cover them.
