  • Granulated sugar - 30 grams
  • Lemon juice - 1 tablespoon
  • Gluten-free all-purpose flour - 80 grams
  • Almond flour - 30 grams
  • Baking powder - 1 teaspoon
  • Salt - 1/4 teaspoon
  • Unsalted butter - 30 grams, melted
  • Milk (dairy or non-dairy) - 60 ml
  • Vanilla extract - 1/2 teaspoon

Steps

  1. Preheat your oven to 180°C (350°F).
  2. In a mixing bowl, combine the mixed berries, 15 grams of sugar, and lemon juice. Stir gently and set aside.
  3. In another bowl, whisk together gluten-free all-purpose flour, almond flour, baking powder, salt, and the remaining 15 grams of sugar.
  4. Add the melted butter, milk, and vanilla extract to the dry ingredients. Stir until just combined; do not overmix.
  5. In a small greased baking dish, pour the berry mixture evenly across the bottom.
  6. Pour the cobbler batter over the berries, spreading it gently to cover them.
  7. Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and a toothpick inserted comes out clean.
