Ingredients

  • beetroot - 200 grams
  • walnuts - 50 grams
  • rolled oats - 50 grams
  • onion - 1 small, finely chopped
  • garlic - 2 cloves, minced
  • flaxseed meal - 1 tablespoon
  • water - 2.5 tablespoons
  • olive oil - 1 tablespoon
  • cumin powder - 1 teaspoon
  • salt - 1/2 teaspoon
  • black pepper - 1/4 teaspoon
  • whole grain burger buns - 2
  • avocado - 1, mashed
  • spinach - 1 cup, fresh

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Wrap the beetroot in aluminum foil and roast it in the oven for about 30-35 minutes, or until tender. Let it cool, then peel and chop.
  3. In a food processor, combine the roasted beetroot, walnuts, rolled oats, onion, garlic, flaxseed meal, cumin, salt, and black pepper. Pulse until the mixture is well combined but still has some texture.
  4. Form the mixture into two equal-sized patties.
  5. Heat olive oil in a non-stick skillet over medium heat. Cook the patties for about 4-5 minutes on each side, until golden brown and heated through.
  6. While the patties are cooking, mash the avocado in a bowl and season with salt and pepper to taste.
  7. Toast the whole grain burger buns until lightly golden.
  8. Assemble the burgers by spreading the mashed avocado on the bottom bun, adding the spinach, and then placing the beetroot walnut patty on top. Finish with the top bun.
  9. Serve immediately and enjoy!
