- Beetroot - 200 grams, cooked and grated
- Black beans - 1 cup, rinsed and drained
- Oats - 1/2 cup, ground into flour
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 2 tablespoons, for cooking
- Whole wheat burger buns - 2
- Lettuce leaves - 2
- Tomato - 1, sliced
- Avocado - 1/2, sliced
- Vegan mayonnaise - 2 tablespoons
Steps
- In a large bowl, mash the black beans with a fork or a potato masher until mostly smooth, leaving some chunks for texture.
- Add the grated beetroot, ground oats, chopped onion, minced garlic, cumin, paprika, salt, and pepper to the bowl. Mix well until all ingredients are combined.
- Form the mixture into 2 equal-sized burger patties.
- Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat. Cook the patties for about 5-7 minutes on each side or until they are golden brown and heated through.
- While the patties are cooking, toast the burger buns in the same skillet for 1-2 minutes until lightly browned.
- Assemble the burgers by spreading vegan mayonnaise on the bottom half of each bun, adding a lettuce leaf, the cooked patty, tomato slices, and avocado. Top with the other half of the bun.
