Ingredients

  • Beetroot - 200 grams, cooked and grated
  • Black beans - 1 cup, rinsed and drained
  • Oats - 1/2 cup, ground into flour
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 2 tablespoons, for cooking
  • Whole wheat burger buns - 2
  • Lettuce leaves - 2
  • Tomato - 1, sliced
  • Avocado - 1/2, sliced
  • Vegan mayonnaise - 2 tablespoons

Steps

  1. In a large bowl, mash the black beans with a fork or a potato masher until mostly smooth, leaving some chunks for texture.
  2. Add the grated beetroot, ground oats, chopped onion, minced garlic, cumin, paprika, salt, and pepper to the bowl. Mix well until all ingredients are combined.
  3. Form the mixture into 2 equal-sized burger patties.
  4. Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat. Cook the patties for about 5-7 minutes on each side or until they are golden brown and heated through.
  5. While the patties are cooking, toast the burger buns in the same skillet for 1-2 minutes until lightly browned.
  6. Assemble the burgers by spreading vegan mayonnaise on the bottom half of each bun, adding a lettuce leaf, the cooked patty, tomato slices, and avocado. Top with the other half of the bun.
