- beetroot - 200 grams, cooked and grated
- cooked quinoa - 100 grams
- black beans - 100 grams, drained and rinsed
- oats - 50 grams, ground
- onion - 1 small, finely chopped
- garlic - 2 cloves, minced
- cumin powder - 1 teaspoon
- salt - 1/2 teaspoon
- black pepper - 1/4 teaspoon
- olive oil - 1 tablespoon (for cooking)
- burger buns - 2
- lettuce leaves - 2
- tomato - 1, sliced
- avocado - 1/2, sliced
- mayonnaise - 2 tablespoons (optional)
Steps
- In a large mixing bowl, combine the grated beetroot, cooked quinoa, black beans, and ground oats.
- Add the finely chopped onion, minced garlic, cumin powder, salt, and black pepper to the mixture. Mash lightly until combined but still chunky.
- Form the mixture into two equal-sized patties.
- Heat olive oil in a non-stick skillet over medium heat. Cook the patties for about 5-7 minutes on each side, or until they're crispy and warmed through.
- Toast the burger buns lightly in the same skillet or in a toaster.
- Assemble the burgers by placing a lettuce leaf on each bun, followed by a beet patty, a slice of tomato, and avocado. Add mayonnaise if desired.
- Top with the other half of the bun and serve immediately.
