- Beef fillet - 300 grams
- Mushrooms (finely chopped) - 200 grams
- Garlic (minced) - 2 cloves
- Shallots (finely chopped) - 1 medium
- Almond flour - 100 grams
- Cream cheese - 100 grams
- Egg (beaten) - 1 large
- Dijon mustard - 1 tablespoon
- Olive oil - 2 tablespoons
- Fresh thyme (chopped) - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
Steps
- Preheat the oven to 200°C (400°F).
- In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the shallots and garlic, cooking until softened, about 2-3 minutes.
- Add the chopped mushrooms and thyme to the skillet. Cook until the mixture is dry and caramelized, about 10-15 minutes. Season with salt and pepper. Remove from heat and let cool.
- In a bowl, combine the cream cheese and almond flour until smooth. Add the beaten egg and mix well to form a dough.
- Season the beef fillet with salt and pepper. In the same skillet, heat the remaining olive oil over high heat. Sear the beef on all sides for about 2-3 minutes until browned. Remove and let cool slightly.
- Spread a thin layer of Dijon mustard over the beef fillet. Then, spread the mushroom mixture evenly over the mustard-covered beef.
- Roll out the almond flour dough between two sheets of parchment paper into a rectangle large enough to wrap the beef. Place the beef in the center and fold the dough over the beef, sealing the edges.
- Transfer the wrapped beef to a baking sheet lined with parchment paper. Brush the top with any remaining beaten egg.
- Bake in the preheated oven for 25-30 minutes, or until the pastry is golden brown and the internal temperature of the beef reaches your desired doneness.
- Let the Beef Wellington rest for 5 minutes before slicing and serving.
