- Beef sirloin - 250 grams, thinly sliced
- Olive oil - 1 tablespoon
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Mushrooms - 150 grams, sliced
- Beef broth - 240 ml
- Sour cream - 100 grams
- Dijon mustard - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Parsley - for garnish
Steps
- Spiralize the zucchini using a spiralizer or a julienne peeler to create zoodles. Set aside.
- In a large skillet, heat olive oil over medium-high heat. Add the sliced beef and sear until browned, about 2-3 minutes. Remove the beef from the skillet and set aside.
- In the same skillet, add the chopped onion and sauté for 2-3 minutes until translucent. Add minced garlic and sliced mushrooms, cooking for an additional 5 minutes until the mushrooms are tender.
- Pour in the beef broth and bring to a simmer. Stir in the Dijon mustard and season with salt and black pepper to taste.
- Reduce the heat to low and return the beef to the skillet. Stir in the sour cream until well combined and heated through, about 2 minutes.
- Add the zoodles to the beef mixture and toss gently to combine, cooking for another 2-3 minutes until the zoodles are just tender.
- Serve warm, garnished with fresh parsley.
