Ingredients

  • Zucchini - 2 medium
  • Beef sirloin - 250 grams, thinly sliced
  • Olive oil - 1 tablespoon
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Mushrooms - 150 grams, sliced
  • Beef broth - 240 ml
  • Sour cream - 100 grams
  • Dijon mustard - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Parsley - for garnish

Steps

  1. Spiralize the zucchini using a spiralizer or a julienne peeler to create zoodles. Set aside.
  2. In a large skillet, heat olive oil over medium-high heat. Add the sliced beef and sear until browned, about 2-3 minutes. Remove the beef from the skillet and set aside.
  3. In the same skillet, add the chopped onion and sauté for 2-3 minutes until translucent. Add minced garlic and sliced mushrooms, cooking for an additional 5 minutes until the mushrooms are tender.
  4. Pour in the beef broth and bring to a simmer. Stir in the Dijon mustard and season with salt and black pepper to taste.
  5. Reduce the heat to low and return the beef to the skillet. Stir in the sour cream until well combined and heated through, about 2 minutes.
  6. Add the zoodles to the beef mixture and toss gently to combine, cooking for another 2-3 minutes until the zoodles are just tender.
