- Beef chuck roast - 450 grams
- Carrots - 2 medium, peeled and cut into chunks
- Potatoes - 2 medium, peeled and cut into quarters
- Onion - 1 large, quartered
- Garlic - 3 cloves, minced
- Beef broth - 500 ml (gluten-free)
- Olive oil - 2 tablespoons
- Dried thyme - 1 teaspoon
- Dried rosemary - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Bay leaf - 1
- Cornstarch - 1 tablespoon (optional, for thickening)
Steps
- Preheat your oven to 160°C (320°F).
- In a heavy, oven-safe pot or Dutch oven, heat the olive oil over medium-high heat.
- Season the beef chuck roast with salt and black pepper, then sear it in the pot until browned on all sides, about 4-5 minutes per side.
- Remove the roast from the pot and set aside. Add onion and garlic to the pot, sautéing until fragrant and slightly softened, about 3 minutes.
- Return the roast to the pot and add the carrots, potatoes, beef broth, thyme, rosemary, and bay leaf.
- Bring the mixture to a simmer, then cover the pot with a lid and transfer it to the preheated oven.
- Cook for about 2 hours, or until the beef is fork-tender and the vegetables are cooked through.
- If you prefer a thicker gravy, remove the roast and vegetables once cooked, and bring the remaining liquid to a boil on the stovetop. Mix cornstarch with a little cold water to create a slurry, then stir it into the boiling liquid until thickened.
- Serve the pot roast sliced, with vegetables and gravy drizzled over the top.
