- Ground beef - 250 grams
- Corn tortillas - 4 pieces
- Onion - 1 small, diced
- Garlic - 2 cloves, minced
- Cumin - 1 teaspoon
- Chili powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Canned diced tomatoes - 200 grams
- Cheddar cheese - 100 grams, grated
- Sour cream - 2 tablespoons
- Fresh cilantro - 2 tablespoons, chopped
Steps
- Preheat your oven to 180°C (350°F).
- In a skillet over medium heat, add the diced onion and minced garlic, sautéing until the onion is translucent, about 3-4 minutes.
- Add the ground beef to the skillet, cooking until browned, breaking it apart with a spoon as it cooks, about 5-7 minutes.
- Stir in the cumin, chili powder, salt, pepper, and canned diced tomatoes. Simmer for 10 minutes, allowing the flavors to meld.
- To assemble the enchiladas, take a corn tortilla, place a few spoonfuls of the beef mixture in the center, sprinkle with some grated cheese, and roll it up tightly. Repeat with the remaining tortillas.
- Place the rolled enchiladas seam-side down in a baking dish. Pour any remaining beef mixture over the top and sprinkle with the remaining cheese.
- Cover the dish with foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 5-10 minutes until the cheese is bubbly and golden.
- Once done, remove from the oven and let cool for a few minutes. Serve topped with sour cream and chopped cilantro.
