Ingredients
- Ground beef - 250 grams
- Low-carb tortillas - 4 pieces
- Shredded cheddar cheese - 150 grams
- Enchilada sauce - 200 ml
- Chopped onion - 50 grams
- Minced garlic - 2 cloves
- Cumin - 1 teaspoon
- Chili powder - 1 teaspoon
- Olive oil - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Sour cream - 50 grams (for serving)
- Fresh cilantro - for garnish
Steps
- Preheat the oven to 180°C (350°F).
- In a skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, sautéing until the onion is translucent.
- Add the ground beef to the skillet, cooking until browned, about 5-7 minutes. Drain excess fat.
- Stir in cumin, chili powder, salt, and black pepper. Mix well and remove from heat.
- In a baking dish, spread a thin layer of enchilada sauce on the bottom.
- Layer 2 low-carb tortillas on top of the sauce, followed by half of the beef mixture and a third of the cheese.
- Repeat the layering with another 2 tortillas, the remaining beef, and another third of the cheese.
- Top with the final layer of tortillas, the remaining enchilada sauce, and the last third of the cheese.
- Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.
- Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
- Allow to cool for a few minutes before serving. Garnish with sour cream and fresh cilantro.
