Ingredients

  • All-purpose flour - 1 1/2 cups
  • Unsalted butter - 1/4 cup, chilled and diced
  • Salt - 1/2 tsp
  • Cold water - 1/4 cup
  • Ground beef - 1/2 lb (225 g)
  • Onion - 1/2 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Paprika - 1 tsp
  • Cumin - 1/2 tsp
  • Salt - 1/2 tsp
  • Black pepper - 1/4 tsp
  • Olive oil - 1 tbsp
  • Egg - 1, beaten (for egg wash)

Steps

  1. In a mixing bowl, combine the flour and salt. Add the chilled, diced butter and mix until the mixture resembles coarse crumbs.
  2. Gradually add cold water, mixing until a dough forms. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
  3. In a skillet over medium heat, add olive oil and sauté the chopped onion until translucent, about 3-4 minutes. Add minced garlic and cook for an additional minute.
  4. Add ground beef, paprika, cumin, salt, and pepper to the skillet. Cook until the beef is browned and cooked through, about 5-7 minutes. Remove from heat and let cool.
  5. Preheat the oven to 375°F (190°C).
  6. Roll out the chilled dough on a floured surface to about 1/8 inch thick. Cut out circles using a 4-inch (10 cm) round cutter.
  7. Place a tablespoon of the beef mixture in the center of each dough circle. Fold the dough over to create a half-moon shape and crimp the edges with a fork to seal.
  8. Place the empanadas on a baking sheet lined with parchment paper. Brush the tops with beaten egg.
  9. Bake in the preheated oven for 20-25 minutes, or until golden brown. Serve warm.
