Ingredients
- All-purpose flour - 1 1/2 cups
- Unsalted butter - 1/4 cup, chilled and diced
- Salt - 1/2 tsp
- Cold water - 1/4 cup
- Ground beef - 1/2 lb (225 g)
- Onion - 1/2 medium, finely chopped
- Garlic - 2 cloves, minced
- Paprika - 1 tsp
- Cumin - 1/2 tsp
- Salt - 1/2 tsp
- Black pepper - 1/4 tsp
- Olive oil - 1 tbsp
- Egg - 1, beaten (for egg wash)
Steps
- In a mixing bowl, combine the flour and salt. Add the chilled, diced butter and mix until the mixture resembles coarse crumbs.
- Gradually add cold water, mixing until a dough forms. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
- In a skillet over medium heat, add olive oil and sauté the chopped onion until translucent, about 3-4 minutes. Add minced garlic and cook for an additional minute.
- Add ground beef, paprika, cumin, salt, and pepper to the skillet. Cook until the beef is browned and cooked through, about 5-7 minutes. Remove from heat and let cool.
- Preheat the oven to 375°F (190°C).
- Roll out the chilled dough on a floured surface to about 1/8 inch thick. Cut out circles using a 4-inch (10 cm) round cutter.
- Place a tablespoon of the beef mixture in the center of each dough circle. Fold the dough over to create a half-moon shape and crimp the edges with a fork to seal.
- Place the empanadas on a baking sheet lined with parchment paper. Brush the tops with beaten egg.
- Bake in the preheated oven for 20-25 minutes, or until golden brown. Serve warm.
