Ingredients

  • Beef chuck - 300 grams, cut into 2.5 cm cubes
  • Dried kidney beans - 50 grams, soaked overnight
  • Potato - 1 medium, peeled and cut into large chunks
  • Onion - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, sliced
  • Beef broth - 500 ml
  • Tomato paste - 1 tablespoon
  • Paprika - 1 teaspoon
  • Cumin - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Bay leaf - 1
  • Olive oil - 1 tablespoon

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and minced garlic, sautéing until translucent, about 5 minutes.
  2. Add the beef cubes to the pot and brown them on all sides for about 8-10 minutes.
  3. Stir in the sliced carrots, soaked kidney beans, potato chunks, tomato paste, paprika, cumin, salt, black pepper, and bay leaf.
  4. Pour in the beef broth, ensuring that all ingredients are submerged. Bring the mixture to a gentle boil.
  5. Reduce the heat to low, cover the pot, and let it simmer for at least 8 hours (or overnight) to allow the flavors to meld and the beef to become tender.
  6. Before serving, remove the bay leaf and taste for seasoning, adjusting salt and pepper as necessary.
