- Dried kidney beans - 50 grams, soaked overnight
- Potato - 1 medium, peeled and cut into large chunks
- Onion - 1 medium, diced
- Garlic - 2 cloves, minced
- Carrot - 1 medium, sliced
- Beef broth - 500 ml
- Tomato paste - 1 tablespoon
- Paprika - 1 teaspoon
- Cumin - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Bay leaf - 1
- Olive oil - 1 tablespoon
Steps
- In a large pot, heat the olive oil over medium heat. Add the diced onion and minced garlic, sautéing until translucent, about 5 minutes.
- Add the beef cubes to the pot and brown them on all sides for about 8-10 minutes.
- Stir in the sliced carrots, soaked kidney beans, potato chunks, tomato paste, paprika, cumin, salt, black pepper, and bay leaf.
- Pour in the beef broth, ensuring that all ingredients are submerged. Bring the mixture to a gentle boil.
- Reduce the heat to low, cover the pot, and let it simmer for at least 8 hours (or overnight) to allow the flavors to meld and the beef to become tender.
- Before serving, remove the bay leaf and taste for seasoning, adjusting salt and pepper as necessary.
