  • Cooked brown rice - 100 grams
  • Cheddar cheese (shredded) - 100 grams
  • Sour cream - 2 tablespoons
  • Salsa - 100 grams
  • Olive oil - 1 tablespoon
  • Garlic (minced) - 2 cloves
  • Onion (chopped) - 1 small
  • Cumin - 1 teaspoon
  • Chili powder - 1 teaspoon
  • Salt - to taste
  • Pepper - to taste
  • Fresh cilantro (chopped) - for garnish

Steps

  1. Heat olive oil in a skillet over medium heat. Add chopped onion and minced garlic, sautéing until softened (about 3-4 minutes).
  2. Add ground beef to the skillet, breaking it up with a spoon. Cook until browned, about 5-7 minutes.
  3. Sprinkle in cumin, chili powder, salt, and pepper. Stir to combine and cook for another 2 minutes.
  4. Add black beans and cooked brown rice to the skillet. Mix well and cook until heated through (about 3-4 minutes).
  5. Warm the tortillas in a dry skillet or microwave for a few seconds to make them pliable.
  6. Spread a layer of the beef mixture in the center of each tortilla, top with shredded cheddar cheese, a dollop of sour cream, and salsa.
  7. Fold in the sides of the tortilla and roll it up tightly. Repeat with the second tortilla.
