- Black beans - 1 cup (240 grams), drained and rinsed
- Cooked brown rice - 1 cup (185 grams)
- Shredded cheddar cheese - 1 cup (100 grams)
- Sour cream - 1/2 cup (120 grams)
- Taco seasoning - 2 tablespoons
- Garlic powder - 1 teaspoon
- Onion powder - 1 teaspoon
- Olive oil - 1 tablespoon
- Flour tortillas - 2 large (10-inch)
- Fresh cilantro - 2 tablespoons, chopped
- Lime - 1, juiced
- Salt - to taste
- Black pepper - to taste
Steps
- In a large skillet, heat the olive oil over medium heat. Add the ground beef, breaking it apart with a spatula, and cook until browned, about 5-7 minutes.
- Drain excess fat from the skillet, then add taco seasoning, garlic powder, onion powder, salt, and pepper. Stir well and cook for another 2-3 minutes until the spices are fragrant.
- Add the black beans, cooked brown rice, and lime juice to the skillet. Mix thoroughly and heat for an additional 3-5 minutes until everything is warmed through.
- Lay out the flour tortillas on a flat surface. Spoon an equal amount of the beef mixture onto the center of each tortilla, then sprinkle with shredded cheddar cheese and fresh cilantro.
- Fold the sides of the tortilla over the filling, then roll it up tightly from the bottom to form a burrito. Repeat with the second tortilla.
- In the same skillet, place the burritos seam-side down and cook for 2-3 minutes on each side until golden brown and crispy. Remove from heat.
