  • Ground beef - 300 grams
  • Black beans - 1 cup (240 grams), drained and rinsed
  • Cooked brown rice - 1 cup (185 grams)
  • Shredded cheddar cheese - 1 cup (100 grams)
  • Sour cream - 1/2 cup (120 grams)
  • Taco seasoning - 2 tablespoons
  • Garlic powder - 1 teaspoon
  • Onion powder - 1 teaspoon
  • Olive oil - 1 tablespoon
  • Flour tortillas - 2 large (10-inch)
  • Fresh cilantro - 2 tablespoons, chopped
  • Lime - 1, juiced
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a large skillet, heat the olive oil over medium heat. Add the ground beef, breaking it apart with a spatula, and cook until browned, about 5-7 minutes.
  2. Drain excess fat from the skillet, then add taco seasoning, garlic powder, onion powder, salt, and pepper. Stir well and cook for another 2-3 minutes until the spices are fragrant.
  3. Add the black beans, cooked brown rice, and lime juice to the skillet. Mix thoroughly and heat for an additional 3-5 minutes until everything is warmed through.
  4. Lay out the flour tortillas on a flat surface. Spoon an equal amount of the beef mixture onto the center of each tortilla, then sprinkle with shredded cheddar cheese and fresh cilantro.
  5. Fold the sides of the tortilla over the filling, then roll it up tightly from the bottom to form a burrito. Repeat with the second tortilla.
  6. In the same skillet, place the burritos seam-side down and cook for 2-3 minutes on each side until golden brown and crispy. Remove from heat.
  7. Serve warm with a dollop of sour cream on the side.
